 Tuna and Corn Melts

Ingredients

95g can tuna in springwater, drained and flaked

1/3 cup frozen corn kernels, thawed

1/2 small celery stalk

1 green shallot, thinly sliced

1/4 cup grated light tasty cheese

1 tbs light (reduced fat) spreadable cream cheese

2 wholemeal muffins, split in half

250g punnet cherry tomatoes, to serve

Method

  1. Place tuna, corn, celery, shallot, tasty cheese and cream cheese in a medium bowl. Mix well to combine.
  2. Preheat grill on high. Place muffin halves on an oven tray. Toast on both sides under preheated grill until lightly browned.
  3. Top muffin halves with tuna mixture. Cook under a preheated grill for 2-3 minutes until cheese is melted and topping is lightly browned. Serve with cherry tomatoes.

Tasks for kids:
Grate cheese and slice celery (with adult supervision).

Combine topping ingredients (Step 1).

Tip: For a tasty variation, replace tuna with cooked, shredded lean chicken.
